Starter:
Gold-Digger Garlic Prawns

Florida Black Chocolate Cheesecake
Gold Digger Garlic Prawns
This starter is fast, easy to make and most importantly delicious!
Serves 4-6
Ingredients:
• 2 lb of prawns
• 4 tablespoons of butter
• 2 teaspoons of minced garlic
• 1 teaspoon of dried oregano
• 1 teaspoon of dried basil
• 1 teaspoon of dried thyme
• 1 teaspoon of cayenne pepper
• 1/4 a bottle of Gold Digger. What you do with the rest of the bottle is entirely up to you..
Method
• Sauté garlic and herbs in butter until garlic is slightly browned.
• Add prawns, stirring constantly, until they are pink and done.
• Pour in Gold Digger, simmer 1 minute more, and serve on a bed of green leaves and a lemon wedge to garnish!
Big Red Beef Stew
This hearty stew is guaranteed to keep your fur warm this winter time.
Serves 4-6
Ingredients:
• 3 rashers of bacon
• 1 lb of quality of stewing steak cut into cubes
• 1 large onion chopped
• 1 pack of mushrooms of chopped
• 2 garlic cloves minced
• 3 tablespoons flour
• ½ bottle of Big Red
• 4 carrots sliced
• 4 parsnips sliced
• 1 litre of beef stock
• 2 tablespoons of Dijon mustard
• 1 teaspoon dried thyme
• ½ teaspoon caraway seeds
• Salt and pepper to taste
• 1 bay leaf
Method:
Cook bacon in a large pan over a medium heat until crisp. Remove bacon from pan, reserving the drippings; set aside. Add half of the meat to the drippings in the pan, cook for 5 minutes, browning on all sides. Remove beef from the pan. Repeat procedure with remaining beef. Remove beef and set aside.
Add onion to the pan, sauté for 4 minutes. Stir in mushrooms and garlic; sauté for 4 minutes or until half of the liquid evaporates. Stir in flour, cook for 2 minutes, stirring occasionally. Stir in the stock scraping to loosen brown bits. Add bacon, beef, Big Red and remaining ingredients to the pan. Bring to the boil. Cover, reduce heat and simmer for 2 hours or until meat is tender. Discard bay leaf.
Florida Black Chocolate Cheesecake
The perfect round off to the evening comes in the form of this decadent and mouth-watering cheesecake.
Ingredients:
For the Base:
• 60g of unsalted butter
• 125g of crushed digestive biscuits
For the Filling:
• 1 bottle of Florida Black
• 200g of caster sugar
• 500g mascarpone cheese
• 280ml of whipped cream
• 3 tablespoons of honey
• Juice of half a lemon
• 8 sheets of gelatine
• 3 tbsp of water
Method:
Melt the butter over a low heat, add in the crushed digestive biscuits. Tip into a lined 6inch spring form tin. Using a spoon press an even layer over the base of the tin. Chill in the refrigerator.
Put Florida Black and sugar in a saucepan and heat on a low heat until it looks like caramel. Remove from the heat and leave to cool.
Meanwhile put mascarpone cheese and honey in a mixing bowl and mix well. Add lemon juice and whipped cream and mix again.
Put gelatine in water for 5 minutes until soft. Squeeze out excess water, then place the squeezed out gelatine in a bowl and melt in a microwave on high power for 10 seconds. Add the gelatine to the cheese mixture along with the cooled beer mixture and beat well. Tip into the prepared tin and chill in the fridge for at least two hours, or until set.
